Ingredients

  • Pizza dough - 250 grams
  • Chicken breast - 200 grams
  • Panko breadcrumbs - 100 grams
  • All-purpose flour - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying
  • Japanese curry roux - 100 grams
  • Water - 300 ml
  • Green onions - 2 stalks, chopped
  • Shredded mozzarella cheese - 100 grams

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Prepare the pizza dough by rolling it out on a floured surface to fit a pizza pan.
  3. Transfer the rolled-out dough to the pizza pan and set aside.
  4. Season the chicken breast with salt and black pepper, then dredge in flour, dip in beaten egg, and coat with panko breadcrumbs.
  5. Heat vegetable oil in a frying pan over medium heat, then fry the breaded chicken until golden brown and cooked through, about 4-5 minutes per side.
  6. In a separate saucepan, combine the curry roux and water, stirring until the roux is dissolved and the sauce thickens, about 10 minutes.
  7. Once the chicken is cooked, slice it into strips.
  8. Spread the curry sauce evenly over the pizza dough, then layer the sliced katsu on top.
  9. Sprinkle shredded mozzarella cheese over the katsu, and add chopped green onions.
  10. Bake in the preheated oven for 12-15 minutes or until the cheese is bubbly and golden.
  11. Allow to cool slightly before slicing and serving.
