- Pizza dough - 250 grams
- Panko breadcrumbs - 100 grams
- Chicken breast - 200 grams
- Curry powder - 2 tablespoons
- Coconut milk - 200 ml
- Onion - 1 medium, diced

- Ginger - 1 teaspoon, grated
- Vegetable oil - 3 tablespoons

Steps
- Preheat your oven to 220°C (428°F).
- Cook the diced onion, minced garlic, and grated ginger in 1 tablespoon of vegetable oil over medium heat until softened, about 5 minutes.
- Add the curry powder and cook for an additional 1 minute until fragrant.
- Pour in the coconut milk, stir well, and let it simmer for 10 minutes until slightly thickened. Season with salt and pepper to taste.
- While the curry sauce is simmering, flatten the chicken breast to an even thickness and season with salt and pepper.
- Dredge the chicken in panko breadcrumbs, ensuring it’s well-coated.
- Heat 2 tablespoons of vegetable oil in a frying pan over medium heat and fry the breaded chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove from the pan and let it rest before slicing.
- Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it onto a pizza stone or baking sheet.
- Spread the curry sauce evenly over the pizza dough, leaving a small border around the edges.
- Layer the sliced katsu chicken on top of the curry sauce.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Remove from the oven, garnish with sliced green onions and fresh coriander leaves, and slice to serve.
