Ingredients

  • Pizza dough - 250 grams
  • Panko breadcrumbs - 100 grams
  • Chicken breast - 200 grams
  • Curry powder - 2 tablespoons
  • Coconut milk - 200 ml
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Vegetable oil - 3 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Green onions - 2, sliced (for garnish)
  • Coriander leaves - a handful (for garnish)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Cook the diced onion, minced garlic, and grated ginger in 1 tablespoon of vegetable oil over medium heat until softened, about 5 minutes.
  3. Add the curry powder and cook for an additional 1 minute until fragrant.
  4. Pour in the coconut milk, stir well, and let it simmer for 10 minutes until slightly thickened. Season with salt and pepper to taste.
  5. While the curry sauce is simmering, flatten the chicken breast to an even thickness and season with salt and pepper.
  6. Dredge the chicken in panko breadcrumbs, ensuring it’s well-coated.
  7. Heat 2 tablespoons of vegetable oil in a frying pan over medium heat and fry the breaded chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove from the pan and let it rest before slicing.
  8. Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it onto a pizza stone or baking sheet.
  9. Spread the curry sauce evenly over the pizza dough, leaving a small border around the edges.
  10. Layer the sliced katsu chicken on top of the curry sauce.
  11. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  12. Remove from the oven, garnish with sliced green onions and fresh coriander leaves, and slice to serve.
