Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 2 tablespoons
  • Coconut milk - 200 ml
  • Chicken broth - 100 ml
  • Cauliflower rice - 300 grams
  • Green onions - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a shallow bowl, beat the egg and season with salt and pepper.
  3. In another bowl, place the almond flour.
  4. Slice the chicken breast into thin cutlets, then dip each piece into the egg mixture, followed by coating it in almond flour.
  5. Heat olive oil in a frying pan over medium heat. Fry the chicken cutlets for 3-4 minutes on each side until golden brown. Transfer them to a baking sheet and finish cooking in the oven for 10 minutes.
  6. In the same pan, add the diced onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  7. Stir in the curry powder and cook for an additional minute until fragrant.
  8. Pour in the coconut milk and chicken broth, then bring to a simmer. Cook for about 10 minutes until the sauce thickens slightly.
  9. While the sauce is simmering, steam the cauliflower rice until tender, about 5-7 minutes.
  10. To serve, place the cauliflower rice on plates, top with the crispy chicken cutlets, and drizzle the curry sauce over the top. Garnish with chopped green onions.
