- Chicken breast - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Curry powder - 2 tablespoons
- Coconut milk - 200 ml
- Chicken broth - 100 ml
- Cauliflower rice - 300 grams
- Green onions - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a shallow bowl, beat the egg and season with salt and pepper.
- In another bowl, place the almond flour.
- Slice the chicken breast into thin cutlets, then dip each piece into the egg mixture, followed by coating it in almond flour.
- Heat olive oil in a frying pan over medium heat. Fry the chicken cutlets for 3-4 minutes on each side until golden brown. Transfer them to a baking sheet and finish cooking in the oven for 10 minutes.
- In the same pan, add the diced onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
- Stir in the curry powder and cook for an additional minute until fragrant.
- Pour in the coconut milk and chicken broth, then bring to a simmer. Cook for about 10 minutes until the sauce thickens slightly.
- While the sauce is simmering, steam the cauliflower rice until tender, about 5-7 minutes.
- To serve, place the cauliflower rice on plates, top with the crispy chicken cutlets, and drizzle the curry sauce over the top. Garnish with chopped green onions.
