- Chicken breast - 250 grams
- Panko breadcrumbs - 100 grams
- All-purpose flour - 50 grams
- Egg - 1 large
- Flatbread (store-bought or homemade) - 2 pieces
- Japanese curry roux - 100 grams
- Vegetable oil - for frying
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Water - 500 ml
- Salt - to taste
- Pepper - to taste
- Green onions - for garnish
Steps
- Prepare the chicken by seasoning it with salt and pepper. Dredge each piece in flour, dip into beaten egg, and coat with panko breadcrumbs.
- Heat vegetable oil in a frying pan over medium heat. Fry the breaded chicken for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and let drain on paper towels.
- In the same pan, add the diced onion, carrot, and potato. Sauté for about 5 minutes until the vegetables start to soften.
- Add 500 ml of water to the pan and bring to a boil. Then, reduce the heat and add the Japanese curry roux, stirring until it dissolves and thickens. Cook for an additional 10 minutes.
- While the curry simmers, warm the flatbreads in a separate pan or microwave.
- Slice the fried chicken into strips and place on top of the warmed flatbreads.
- Pour the curry sauce over the chicken and garnish with chopped green onions. Serve hot.
