Ingredients

  • Chicken breast - 250 grams
  • Panko breadcrumbs - 100 grams
  • All-purpose flour - 50 grams
  • Egg - 1 large
  • Flatbread (store-bought or homemade) - 2 pieces
  • Japanese curry roux - 100 grams
  • Vegetable oil - for frying
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Water - 500 ml
  • Salt - to taste
  • Pepper - to taste
  • Green onions - for garnish

Steps

  1. Prepare the chicken by seasoning it with salt and pepper. Dredge each piece in flour, dip into beaten egg, and coat with panko breadcrumbs.
  2. Heat vegetable oil in a frying pan over medium heat. Fry the breaded chicken for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and let drain on paper towels.
  3. In the same pan, add the diced onion, carrot, and potato. Sauté for about 5 minutes until the vegetables start to soften.
  4. Add 500 ml of water to the pan and bring to a boil. Then, reduce the heat and add the Japanese curry roux, stirring until it dissolves and thickens. Cook for an additional 10 minutes.
  5. While the curry simmers, warm the flatbreads in a separate pan or microwave.
  6. Slice the fried chicken into strips and place on top of the warmed flatbreads.
  7. Pour the curry sauce over the chicken and garnish with chopped green onions. Serve hot.
