Ingredients

  • Chicken breast - 2 pieces (200g each)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • All-purpose flour - 1/2 cup
  • Egg - 1 large, beaten
  • Panko breadcrumbs - 1 cup
  • Vegetable oil - 1/2 cup (for frying)
  • Cooked Japanese short-grain rice - 2 cups
  • Onion - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Potato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Water - 2 cups
  • Cornstarch - 1 tablespoon (mixed with 2 tablespoons of water for thickening)
  • Green onions - 2 stalks, chopped (for garnish)

Steps

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. Dredge each chicken breast in flour, shaking off the excess, then dip in the beaten egg, and finally coat with panko breadcrumbs.
  3. Heat vegetable oil in a frying pan over medium heat. Fry the breaded chicken until golden brown and cooked through, about 5-7 minutes per side. Remove and set aside to drain on paper towels.
  4. In a separate pot, sauté the diced onion, carrot, and potato over medium heat until softened, about 5-7 minutes.
  5. Add minced garlic and grated ginger to the vegetables and cook for another 1-2 minutes until fragrant.
  6. Stir in the curry powder, soy sauce, and sugar, cooking for another minute to toast the spices.
  7. Pour in the water and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the vegetables are tender.
  8. Stir in the cornstarch mixture to thicken the curry sauce, cooking for an additional 2-3 minutes until it reaches desired consistency.
  9. Slice the fried chicken cutlets and serve them on a bed of cooked rice, generously ladle the curry sauce over the top, and garnish with chopped green onions.
