Ingredients
- Chicken breast - 2 pieces (200g each)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- All-purpose flour - 1/2 cup
- Egg - 1 large, beaten
- Panko breadcrumbs - 1 cup
- Vegetable oil - 1/2 cup (for frying)
- Cooked Japanese short-grain rice - 2 cups
- Onion - 1 medium, diced
- Carrot - 1 medium, sliced
- Potato - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Curry powder - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Water - 2 cups
- Cornstarch - 1 tablespoon (mixed with 2 tablespoons of water for thickening)
- Green onions - 2 stalks, chopped (for garnish)
Steps
- Season the chicken breasts with salt and black pepper on both sides.
- Dredge each chicken breast in flour, shaking off the excess, then dip in the beaten egg, and finally coat with panko breadcrumbs.
- Heat vegetable oil in a frying pan over medium heat. Fry the breaded chicken until golden brown and cooked through, about 5-7 minutes per side. Remove and set aside to drain on paper towels.
- In a separate pot, sauté the diced onion, carrot, and potato over medium heat until softened, about 5-7 minutes.
- Add minced garlic and grated ginger to the vegetables and cook for another 1-2 minutes until fragrant.
- Stir in the curry powder, soy sauce, and sugar, cooking for another minute to toast the spices.
- Pour in the water and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the vegetables are tender.
- Stir in the cornstarch mixture to thicken the curry sauce, cooking for an additional 2-3 minutes until it reaches desired consistency.
- Slice the fried chicken cutlets and serve them on a bed of cooked rice, generously ladle the curry sauce over the top, and garnish with chopped green onions.
