- Firm tofu - 200 grams
- Panko breadcrumbs - 1 cup (100 grams)
- All-purpose flour - 1/2 cup (60 grams)
- Plant-based milk - 1/2 cup (120 ml)
- Curry powder - 2 tablespoons (30 grams)
- Vegetable oil - for frying
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Soy sauce - 1 tablespoon (15 ml)
- Ketchup - 1 tablespoon (15 ml)
- Miso paste - 1 teaspoon (5 grams)
- Vegetable broth - 1 cup (240 ml)
- Cornstarch - 1 tablespoon (8 grams)
- Sesame seeds - for garnish
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into two thick patties.
- In a shallow bowl, whisk together the plant-based milk and miso paste. In another bowl, place the all-purpose flour, and in a third bowl, place the panko breadcrumbs.
- Dip each tofu patty first in the flour, then in the milk mixture, and finally coat with panko breadcrumbs, ensuring an even coating.
- In a large skillet, heat vegetable oil over medium heat. Once hot, fry the tofu patties for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
- In a saucepan, combine vegetable broth with curry powder, soy sauce, and ketchup. Bring to a simmer and mix well.
- In a small bowl, mix cornstarch with a little water to create a slurry, then add it to the curry sauce to thicken. Simmer for another 3-4 minutes until the sauce is thickened.
- To assemble the burgers, place lettuce on the bottom bun, add the crispy tofu patty, top with a spoonful of curry sauce, sliced tomatoes, and cucumbers. Sprinkle sesame seeds on top.
- Close the burger with the top bun and serve immediately with extra curry sauce on the side.
