Ingredients

  • Firm tofu - 200 grams
  • Panko breadcrumbs - 1 cup (100 grams)
  • All-purpose flour - 1/2 cup (60 grams)
  • Plant-based milk - 1/2 cup (120 ml)
  • Curry powder - 2 tablespoons (30 grams)
  • Vegetable oil - for frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Soy sauce - 1 tablespoon (15 ml)
  • Ketchup - 1 tablespoon (15 ml)
  • Miso paste - 1 teaspoon (5 grams)
  • Vegetable broth - 1 cup (240 ml)
  • Cornstarch - 1 tablespoon (8 grams)
  • Sesame seeds - for garnish

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into two thick patties.
  2. In a shallow bowl, whisk together the plant-based milk and miso paste. In another bowl, place the all-purpose flour, and in a third bowl, place the panko breadcrumbs.
  3. Dip each tofu patty first in the flour, then in the milk mixture, and finally coat with panko breadcrumbs, ensuring an even coating.
  4. In a large skillet, heat vegetable oil over medium heat. Once hot, fry the tofu patties for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
  5. In a saucepan, combine vegetable broth with curry powder, soy sauce, and ketchup. Bring to a simmer and mix well.
  6. In a small bowl, mix cornstarch with a little water to create a slurry, then add it to the curry sauce to thicken. Simmer for another 3-4 minutes until the sauce is thickened.
  7. To assemble the burgers, place lettuce on the bottom bun, add the crispy tofu patty, top with a spoonful of curry sauce, sliced tomatoes, and cucumbers. Sprinkle sesame seeds on top.
  8. Close the burger with the top bun and serve immediately with extra curry sauce on the side.
