- Chicken breast - 250 grams
- Almond flour - 50 grams
- Egg - 1 large
- Pork panko (low carb) - 30 grams
- Shredded cabbage - 100 grams
- Mayonnaise - 30 grams
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Lettuce leaves - 2 large
Steps
- Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
- Pound the chicken breast to an even thickness and season both sides with salt and black pepper.
- In one bowl, beat the egg. In another bowl, combine almond flour and pork panko.
- Dip the chicken first in the egg, then coat it with the almond flour and pork panko mixture, pressing to adhere.
- Fry the breaded chicken in the preheated skillet for about 5-6 minutes on each side or until golden brown and cooked through.
- While the chicken is cooking, prepare the slaw by mixing the shredded cabbage with mayonnaise, soy sauce, and rice vinegar in a bowl.
- Once the chicken is done, remove it from the skillet and let it rest for a couple of minutes.
- To assemble the Katsu Burger, place a lettuce leaf on a plate, top it with the crispy chicken, and add a generous portion of the cabbage slaw on top. Add another lettuce leaf on top if desired.
