Ingredients

  • Chicken breast - 250 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Pork panko (low carb) - 30 grams
  • Shredded cabbage - 100 grams
  • Mayonnaise - 30 grams
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Lettuce leaves - 2 large

Steps

  1. Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. Pound the chicken breast to an even thickness and season both sides with salt and black pepper.
  3. In one bowl, beat the egg. In another bowl, combine almond flour and pork panko.
  4. Dip the chicken first in the egg, then coat it with the almond flour and pork panko mixture, pressing to adhere.
  5. Fry the breaded chicken in the preheated skillet for about 5-6 minutes on each side or until golden brown and cooked through.
  6. While the chicken is cooking, prepare the slaw by mixing the shredded cabbage with mayonnaise, soy sauce, and rice vinegar in a bowl.
  7. Once the chicken is done, remove it from the skillet and let it rest for a couple of minutes.
  8. To assemble the Katsu Burger, place a lettuce leaf on a plate, top it with the crispy chicken, and add a generous portion of the cabbage slaw on top. Add another lettuce leaf on top if desired.
