Kasutera is a fluffy and delightful Japanese sponge cake, originally brought to Japan by Portuguese missionaries. This Halal version is light, sweet, and perfect for pairing with a cup of tea or coffee.

- All-purpose flour - 50 grams
- Granulated sugar - 70 grams
- Eggs - 2 large
- Honey - 20 grams
- Milk - 30 ml
- Baking powder - 1/2 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 170°C (340°F) and grease a small rectangular baking pan (about 15x10 cm) with oil or line it with parchment paper.
- In a bowl, whisk the eggs and sugar together until the mixture is thick and pale, about 5 minutes.
- Add honey, milk, and vanilla extract to the egg mixture, stirring gently until combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture, being careful not to deflate the batter.
- Pour the batter into the prepared baking pan, smoothing the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
