Kasutera is a fluffy and delightful Japanese sponge cake, originally brought to Japan by Portuguese missionaries. This Halal version is light, sweet, and perfect for pairing with a cup of tea or coffee.

Ingredients

  • All-purpose flour - 50 grams
  • Granulated sugar - 70 grams
  • Eggs - 2 large
  • Honey - 20 grams
  • Milk - 30 ml
  • Baking powder - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 170°C (340°F) and grease a small rectangular baking pan (about 15x10 cm) with oil or line it with parchment paper.
  2. In a bowl, whisk the eggs and sugar together until the mixture is thick and pale, about 5 minutes.
  3. Add honey, milk, and vanilla extract to the egg mixture, stirring gently until combined.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture, being careful not to deflate the batter.
  6. Pour the batter into the prepared baking pan, smoothing the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
