- Udon noodles - 200 grams

- Mirin - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Onion - 1 medium, sliced
- Carrot - 1 medium, sliced
- Potato - 1 medium, diced
- Bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Fresh cilantro - for garnish
- Salt - to taste

Steps
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent, about 3-4 minutes.
- Add the sliced carrot and diced potato to the pot, cooking for another 5 minutes until they start to soften.
- Stir in the curry powder, cooking for 1 minute to release the flavors.
- Pour in the vegetable broth, soy sauce, and mirin. Bring to a simmer and cook for 10-15 minutes until the vegetables are tender.
- Add the sliced bell pepper and cooked udon noodles to the pot, stirring to combine. Cook for an additional 2-3 minutes to heat the noodles through.
- Season with salt and black pepper to taste.
- Serve hot, garnished with chopped green onions and fresh cilantro.
