- Vegetable oil - 2 tablespoons
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Zucchini - 1 small, diced
- Garlic - 2 cloves, minced
- Kosher chicken breast - 200 grams, cubed
- Water - 500 milliliters
- Curry powder - 2 tablespoons
- Soy sauce (kosher) - 1 tablespoon
- Ketchup - 1 tablespoon
- Curry roux (kosher) - 1 block (approx. 100 grams)
- Cooked white rice - 2 cups
- Green onions - 2 tablespoons, chopped (for garnish)
Steps
- Heat the vegetable oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, carrot, potato, and zucchini to the pot. Stir and cook for another 5 minutes until the vegetables start to soften.
- Add the cubed chicken breast to the pot and cook until it's browned on all sides, about 5 minutes.
- Pour in the water, then stir in the curry powder, soy sauce, and ketchup. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
- Break the curry roux into pieces and stir it into the pot. Continue to simmer for an additional 10 minutes, stirring occasionally until the sauce thickens.
- While the curry is simmering, prepare the cooked white rice according to package instructions if not already prepared.
- Serve the curry over a bed of rice, and garnish with chopped green onions.
