Steps
- Heat the olive oil in a large pan over medium heat.

- Stir in the sliced carrot and diced potato, cooking for an additional 5 minutes.
- Sprinkle the gluten-free curry powder over the mixture and stir to combine, cooking for 1 minute until fragrant.
- Pour in the chicken broth and coconut milk, stirring well. Bring to a gentle simmer.
- Cover and cook for about 15 minutes, or until the vegetables are tender.
- Add the frozen green peas and simmer for another 5 minutes, adjusting seasoning with salt and black pepper to taste.
