  • Green peas - 50 grams, frozen

Steps

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped onion, garlic, and ginger; sauté until the onion is translucent.
  3. Add the diced chicken breast to the pan, cooking until browned on all sides.
  4. Stir in the sliced carrot and diced potato, cooking for an additional 5 minutes.
  5. Sprinkle the gluten-free curry powder over the mixture and stir to combine, cooking for 1 minute until fragrant.
  6. Pour in the chicken broth and coconut milk, stirring well. Bring to a gentle simmer.
  7. Cover and cook for about 15 minutes, or until the vegetables are tender.
  8. Add the frozen green peas and simmer for another 5 minutes, adjusting seasoning with salt and black pepper to taste.
  9. Serve the curry over the cooked gluten-free rice, garnishing with fresh herbs if desired.
