Ingredients
- Almond flour - 200g
- Tapioca flour - 50g
- Egg - 1 large
- Coconut oil - 60g, melted
- Salt - 1/2 tsp
- Ground black pepper - 1/4 tsp
- Ground cumin - 1/2 tsp
- Ground coriander - 1/2 tsp
- Ground turmeric - 1/2 tsp
- Ground ginger - 1/4 tsp
- Garlic - 2 cloves, minced
- Ground beef or turkey - 200g
- Carrot - 1 medium, diced
- Onion - 1 small, diced
- Coconut milk - 100ml
- Green peas - 50g (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, tapioca flour, salt, and pepper. Stir in the melted coconut oil and egg until a dough forms. Set aside.
- In a skillet over medium heat, add coconut oil. Sauté onions and garlic until translucent.
- Add ground meat, cooking until browned. Stir in diced carrot, cumin, coriander, turmeric, ginger, and coconut milk. Cook until the carrots are tender and the mixture thickens, about 10 minutes. Stir in green peas if using.
- Remove the meat mixture from heat and let it cool slightly.
- Divide the dough into two equal portions. Flatten each portion into a disc on parchment paper.
- Place half of the meat mixture in the center of each disc. Fold the dough over to encase the filling, sealing the edges with your fingers.
- Place the filled dough on a baking sheet lined with parchment paper. Bake in the preheated oven for 25 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
