Ingredients

  • Chicken thighs, boneless - 300 grams
  • Soy sauce - 30 ml
  • Sake - 15 ml
  • Mirin - 15 ml
  • Garlic, minced - 1 clove
  • Ginger, grated - 1 teaspoon
  • Cornstarch - 30 grams
  • Lettuce leaves (butter or romaine) - 6 large leaves
  • Vegetable oil - for frying
  • Sesame seeds - 1 tablespoon
  • Green onion, sliced - 2 tablespoons

Steps

  1. Cut the chicken thighs into bite-sized pieces and set aside.
  2. In a bowl, combine soy sauce, sake, mirin, minced garlic, and grated ginger to create the marinade.
  3. Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  4. After marinating, remove the chicken from the marinade and let excess liquid drip off.
  5. Dust the marinated chicken pieces with cornstarch, ensuring they are evenly coated.
  6. Heat vegetable oil in a frying pan over medium-high heat. Once hot, carefully add the chicken pieces in batches, frying until golden brown and cooked through, about 4-5 minutes per side.
  7. Once cooked, transfer the crispy chicken to a plate lined with paper towels to drain excess oil.
  8. To assemble, take a lettuce leaf and place a few pieces of karaage inside. Sprinkle with sesame seeds and sliced green onions.
  9. Repeat with the remaining lettuce leaves and chicken, then serve immediately.
