Ingredients

  • Chicken thigh - 300 grams, boneless and skinless
  • Soy sauce - 2 tablespoons
  • Sake - 1 tablespoon
  • Mirin - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cornstarch - 4 tablespoons
  • All-purpose flour - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. Cut the chicken thighs into bite-sized pieces and place them in a bowl.
  2. In a separate bowl, mix soy sauce, sake, mirin, minced garlic, and grated ginger. Pour the marinade over the chicken and let it marinate for at least 15 minutes.
  3. In another bowl, combine cornstarch, all-purpose flour, baking powder, salt, and black pepper.
  4. Heat vegetable oil in a deep frying pan or pot over medium heat until it reaches 180°C (350°F).
  5. Coat each piece of marinated chicken in the flour mixture, shaking off any excess.
  6. Carefully add the coated chicken pieces to the hot oil in batches, frying them for about 5-6 minutes until they are golden brown and crispy.
  7. Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil.
  8. Serve hot with rice and your choice of side vegetables.
