Ingredients
- Chicken thigh - 300 grams, boneless and skinless
- Soy sauce - 2 tablespoons
- Sake - 1 tablespoon
- Mirin - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cornstarch - 4 tablespoons
- All-purpose flour - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- Cut the chicken thighs into bite-sized pieces and place them in a bowl.
- In a separate bowl, mix soy sauce, sake, mirin, minced garlic, and grated ginger. Pour the marinade over the chicken and let it marinate for at least 15 minutes.
- In another bowl, combine cornstarch, all-purpose flour, baking powder, salt, and black pepper.
- Heat vegetable oil in a deep frying pan or pot over medium heat until it reaches 180°C (350°F).
- Coat each piece of marinated chicken in the flour mixture, shaking off any excess.
- Carefully add the coated chicken pieces to the hot oil in batches, frying them for about 5-6 minutes until they are golden brown and crispy.
- Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil.
- Serve hot with rice and your choice of side vegetables.
