Ingredients

  • Chicken thigh fillets - 400 grams
  • Soy sauce - 60 ml
  • Sake - 30 ml
  • Mirin - 30 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cornstarch - 75 grams
  • Vegetable oil - for frying
  • Cooked Japanese rice - 300 grams
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon
  • Nori (seaweed) - for garnish, optional

Steps

  1. Cut the chicken thigh fillets into bite-sized pieces and place them in a bowl.
  2. In a separate bowl, mix soy sauce, sake, mirin, garlic, and ginger to create a marinade.
  3. Pour the marinade over the chicken pieces, ensuring they are well-coated. Cover and let marinate for at least 15 minutes.
  4. In a shallow dish, add cornstarch for coating the chicken.
  5. Heat vegetable oil in a deep pan or fryer over medium heat.
  6. Remove the chicken from the marinade, letting excess liquid drip off, then coat each piece in cornstarch, shaking off any excess.
  7. Fry the chicken in batches for about 5-6 minutes or until golden brown and cooked through. Drain on paper towels.
  8. While the chicken is frying, heat the cooked rice if necessary and divide it between two bowls.
  9. Top each bowl of rice with the fried chicken, and sprinkle with sliced green onions and sesame seeds.
  10. Garnish with nori if desired and serve immediately.
