- Chicken thigh - 300 grams, boneless and skinless
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 teaspoon
- Almond flour - 1/2 cup
- Pork rinds - 1/4 cup, crushed
- Egg - 1 large, beaten
- Salt - to taste
- Black pepper - to taste
- Oil for frying - as needed
Steps
- Cut the chicken thighs into bite-sized pieces and place them in a bowl.
- In a separate bowl, mix soy sauce, mirin, minced garlic, grated ginger, sesame oil, salt, and black pepper to create the marinade.
- Pour the marinade over the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- In a shallow dish, combine almond flour and crushed pork rinds. This will be your coating mixture.
- Heat oil in a frying pan over medium heat, sufficient for shallow frying.
- Remove the chicken from the marinade and dip each piece into the beaten egg, then coat with the almond flour and pork rind mixture.
- Carefully place the coated chicken bites in the hot oil, frying them in batches until golden brown and cooked through, about 4-5 minutes per side.
- Once cooked, transfer the chicken bites to a paper towel-lined plate to drain excess oil.
- Serve hot with a side of sugar-free dipping sauce or enjoy them plain.
