Ingredients
- Chicken thighs - 400 grams, boneless and skinless
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 teaspoon
- Almond flour - 100 grams
- Pork rinds - 50 grams, crushed
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Egg - 1, beaten
- Avocado oil - for frying
Steps
- In a bowl, combine soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil. Add the chicken thighs and marinate for at least 15 minutes.
- In a separate shallow dish, mix almond flour, crushed pork rinds, salt, and black pepper.
- Remove the chicken from the marinade and dip each piece into the beaten egg, ensuring it's well coated.
- Then, roll the chicken in the almond flour mixture until fully coated.
- Heat avocado oil in a deep skillet over medium heat until hot (around 175°C or 350°F).
- Fry the chicken pieces in batches for about 5-7 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the oil and place on a paper towel to drain excess oil.
- Serve hot, garnished with lemon wedges and a side of leafy greens.
