Ingredients
- Chicken thigh (boneless, skinless) - 300 grams
- Soy sauce - 30 ml
- Mirin - 15 ml
- Garlic (minced) - 1 clove
- Ginger (grated) - 1 teaspoon
- Cornstarch - 50 grams
- Panko breadcrumbs - 100 grams
- Vegetable oil (for frying) - 250 ml
- Burger buns - 2
- Shredded lettuce - 50 grams
- Tomato (sliced) - 1 medium
- Japanese mayo - 30 grams
- Pickled ginger - 20 grams
Steps
- In a bowl, combine soy sauce, mirin, minced garlic, and grated ginger to create a marinade.
- Cut the chicken thighs into burger-sized pieces and add them to the marinade. Let them marinate for at least 15 minutes.
- While the chicken is marinating, prepare your toppings: slice the tomato, wash and dry the lettuce, and set aside pickled ginger.
- After marinating, remove the chicken pieces and pat them dry with paper towels.
- Dredge each piece of chicken first in cornstarch, then dip into the panko breadcrumbs, ensuring they are fully coated.
- In a deep frying pan, heat the vegetable oil over medium-high heat. When the oil is hot, carefully add the breaded chicken pieces.
- Fry the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
- To assemble the burger, spread a tablespoon of Japanese mayo on the bottom half of each bun.
- Layer shredded lettuce, fried chicken, a slice of tomato, and pickled ginger on top of the mayo.
- Place the top half of the bun on the burger and serve hot.
