Ingredients

  • Chicken thigh (boneless, skinless) - 300 grams
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Cornstarch - 50 grams
  • Panko breadcrumbs - 100 grams
  • Vegetable oil (for frying) - 250 ml
  • Burger buns - 2
  • Shredded lettuce - 50 grams
  • Tomato (sliced) - 1 medium
  • Japanese mayo - 30 grams
  • Pickled ginger - 20 grams

Steps

  1. In a bowl, combine soy sauce, mirin, minced garlic, and grated ginger to create a marinade.
  2. Cut the chicken thighs into burger-sized pieces and add them to the marinade. Let them marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare your toppings: slice the tomato, wash and dry the lettuce, and set aside pickled ginger.
  4. After marinating, remove the chicken pieces and pat them dry with paper towels.
  5. Dredge each piece of chicken first in cornstarch, then dip into the panko breadcrumbs, ensuring they are fully coated.
  6. In a deep frying pan, heat the vegetable oil over medium-high heat. When the oil is hot, carefully add the breaded chicken pieces.
  7. Fry the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
  8. To assemble the burger, spread a tablespoon of Japanese mayo on the bottom half of each bun.
  9. Layer shredded lettuce, fried chicken, a slice of tomato, and pickled ginger on top of the mayo.
  10. Place the top half of the bun on the burger and serve hot.
