Ingredients

  • Chicken thigh fillets - 300 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sake - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Cornstarch - 100 grams
  • Vegetable oil - for frying
  • Lemon wedges - for serving
  • Shredded cabbage - 100 grams

Steps

  1. Cut the chicken thigh fillets into bite-sized pieces and place them in a bowl.
  2. In a separate bowl, mix together soy sauce, mirin, sake, minced garlic, and grated ginger to create the marinade.
  3. Pour the marinade over the chicken pieces and let them marinate for at least 15 minutes.
  4. After marinating, remove the chicken from the marinade and allow excess liquid to drip off.
  5. Coat each piece of chicken in cornstarch, ensuring they are evenly covered.
  6. Heat vegetable oil in a deep pan or fryer to 180°C (350°F).
  7. Fry the chicken pieces in batches for about 4-5 minutes until golden brown and cooked through.
  8. Remove the fried chicken and place it on a paper towel to drain excess oil.
  9. Serve the karaage hot with lemon wedges and a side of shredded cabbage.
