- Cornstarch - 100 grams
- Vegetable oil - for frying
- Lemon wedges - for serving
- Shredded cabbage - 100 grams
Steps
- Cut the chicken thigh fillets into bite-sized pieces and place them in a bowl.
- In a separate bowl, mix together soy sauce, mirin, sake, minced garlic, and grated ginger to create the marinade.
- Pour the marinade over the chicken pieces and let them marinate for at least 15 minutes.
- After marinating, remove the chicken from the marinade and allow excess liquid to drip off.
- Coat each piece of chicken in cornstarch, ensuring they are evenly covered.
- Heat vegetable oil in a deep pan or fryer to 180°C (350°F).
- Fry the chicken pieces in batches for about 4-5 minutes until golden brown and cooked through.
- Remove the fried chicken and place it on a paper towel to drain excess oil.
- Serve the karaage hot with lemon wedges and a side of shredded cabbage.
