Kappa Maki

Kappa Maki is a refreshing Japanese breakfast roll made with crisp cucumber wrapped in seasoned sushi rice and nori, perfect for a light start to your day. This healthy dish is not only delicious but also packed with nutrients and flavor.

Ingredients

  • Sushi rice - 150 grams
  • Water - 180 ml
  • Rice vinegar - 15 ml
  • Sugar - 5 grams
  • Salt - 2 grams
  • Cucumber - 1 medium (about 120 grams)
  • Nori sheets - 2
  • Sesame seeds - 5 grams (optional)
  • Soy sauce - 30 ml (for dipping)

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the rice and combine it with 180 ml of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove the saucepan from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  4. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
  5. While the rice cools, wash and cut the cucumber into long, thin strips.
  6. Lay a nori sheet on a bamboo sushi mat, shiny side down, and spread half of the cooled sushi rice evenly over the nori, leaving a 2 cm border at the top.
  7. Place half of the cucumber strips in a line across the rice and sprinkle with sesame seeds if using.
  8. Begin rolling the sushi away from you, using the mat to help shape it tightly. Seal the edge with a little water.
  9. Repeat the process with the second nori sheet and remaining ingredients.
  10. Using a sharp knife, slice each roll into bite-sized pieces. Serve with soy sauce for dipping.
