Kappa Maki
Kappa Maki is a refreshing Japanese breakfast roll made with crisp cucumber wrapped in seasoned sushi rice and nori, perfect for a light start to your day. This healthy dish is not only delicious but also packed with nutrients and flavor.

Ingredients
- Sushi rice - 150 grams
- Water - 180 ml
- Rice vinegar - 15 ml
- Sugar - 5 grams
- Salt - 2 grams
- Cucumber - 1 medium (about 120 grams)
- Nori sheets - 2
- Sesame seeds - 5 grams (optional)
- Soy sauce - 30 ml (for dipping)
Steps
- Rinse the sushi rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Drain the rice and combine it with 180 ml of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove the saucepan from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
- While the rice cools, wash and cut the cucumber into long, thin strips.
- Lay a nori sheet on a bamboo sushi mat, shiny side down, and spread half of the cooled sushi rice evenly over the nori, leaving a 2 cm border at the top.
- Place half of the cucumber strips in a line across the rice and sprinkle with sesame seeds if using.
- Begin rolling the sushi away from you, using the mat to help shape it tightly. Seal the edge with a little water.
- Repeat the process with the second nori sheet and remaining ingredients.
- Using a sharp knife, slice each roll into bite-sized pieces. Serve with soy sauce for dipping.
