Ingredients

  • Udon noodles - 200 grams
  • Crab sticks (imitation crab) - 100 grams, shredded
  • Dashi stock - 500 ml (made with Halal ingredients)
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Green onions - 2, finely sliced
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Spinach - 100 grams, washed
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a pot, heat the dashi stock over medium heat until it reaches a simmer.
  3. Add the soy sauce, mirin, and sliced mushrooms to the pot, and cook for about 5 minutes until the mushrooms are tender.
  4. Stir in the shredded crab sticks and spinach, cooking for an additional 2-3 minutes until the spinach wilts.
  5. Add the cooked udon noodles to the pot, gently stirring to combine all ingredients, and heat through for 2 minutes.
  6. Drizzle sesame oil over the dish, and season with salt and black pepper to taste.
  7. Serve hot, garnished with sliced green onions.
