- Udon noodles - 200 grams
- Crab sticks (imitation crab) - 100 grams, shredded
- Dashi stock - 500 ml (made with Halal ingredients)
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Green onions - 2, finely sliced
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Spinach - 100 grams, washed
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a pot, heat the dashi stock over medium heat until it reaches a simmer.
- Add the soy sauce, mirin, and sliced mushrooms to the pot, and cook for about 5 minutes until the mushrooms are tender.
- Stir in the shredded crab sticks and spinach, cooking for an additional 2-3 minutes until the spinach wilts.
- Add the cooked udon noodles to the pot, gently stirring to combine all ingredients, and heat through for 2 minutes.
- Drizzle sesame oil over the dish, and season with salt and black pepper to taste.
- Serve hot, garnished with sliced green onions.
