Ingredients

  • Crab meat - 200 grams
  • Shirataki noodles - 200 grams
  • Dashi stock - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Spinach - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the shirataki noodles under cold water and drain well.
  2. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
  3. Add the dashi stock, soy sauce, and mirin to the pot. Bring to a gentle simmer.
  4. Add the sliced mushrooms and cook for about 5 minutes until they are tender.
  5. Stir in the crab meat and shirataki noodles, cooking for an additional 3-4 minutes until heated through.
  6. Add the spinach and chopped green onions, cooking until the spinach wilts, about 2 minutes.
  7. Season with salt and pepper to taste. Serve hot in bowls.
