- Soba noodles - 200 grams
- Imitation crab meat (kani) - 150 grams, shredded
- Soy sauce - 30 ml
- Mirin - 15 ml
- Sesame oil - 10 ml
- Green onions - 2, chopped
- Cucumber - 1 small, julienned
- Carrot - 1 small, julienned
- Nori (seaweed) - 1 sheet, cut into strips
- Wasabi - to taste
- Pickled ginger - for garnish
Steps
- Bring a pot of water to a boil and cook the soba noodles according to package instructions (usually about 4-5 minutes).
- While the noodles are cooking, prepare the sauce by mixing the soy sauce, mirin, and sesame oil in a small bowl.
- Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
- In a large bowl, combine the cooled soba noodles, shredded crab meat, chopped green onions, julienned cucumber, and carrot.
- Pour the sauce over the noodle mixture and toss gently to combine all ingredients evenly.
- Serve the Kani Soba in bowls, garnished with nori strips, a dollop of wasabi, and pickled ginger on the side.
