Ingredients

  • Soba noodles - 200 grams
  • Imitation crab meat (kani) - 150 grams, shredded
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sesame oil - 10 ml
  • Green onions - 2, chopped
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Nori (seaweed) - 1 sheet, cut into strips
  • Wasabi - to taste
  • Pickled ginger - for garnish

Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions (usually about 4-5 minutes).
  2. While the noodles are cooking, prepare the sauce by mixing the soy sauce, mirin, and sesame oil in a small bowl.
  3. Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
  4. In a large bowl, combine the cooled soba noodles, shredded crab meat, chopped green onions, julienned cucumber, and carrot.
  5. Pour the sauce over the noodle mixture and toss gently to combine all ingredients evenly.
  6. Serve the Kani Soba in bowls, garnished with nori strips, a dollop of wasabi, and pickled ginger on the side.
