Ingredients

  • Cooked sushi rice - 300 grams
  • Crab meat (preferably fresh or canned) - 150 grams
  • Eggs - 2 large
  • Green onions - 3 stalks, chopped
  • Carrot - 1 medium, diced
  • Frozen peas - 100 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - 1 tablespoon

Steps

  1. Heat vegetable oil in a large non-stick skillet or wok over medium heat.
  2. Add the diced carrot and frozen peas, and stir-fry for about 3-4 minutes until the vegetables are tender.
  3. Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked, then mix with the vegetables.
  4. Add the cooked sushi rice to the skillet, breaking up any clumps, and stir to combine with the vegetables and eggs.
  5. Stir in the crab meat, chopped green onions, soy sauce, sesame oil, salt, and black pepper. Cook for an additional 3-5 minutes, stirring frequently, until everything is heated through.
