Ingredients

  • Duck breast - 300 grams
  • Soy sauce - 30 ml
  • Mirin - 30 ml
  • Sake - 15 ml
  • Brown sugar - 15 grams
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Green onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, mix soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to create the marinade.
  2. Score the skin of the duck breast in a crosshatch pattern, then place it in the marinade. Let it marinate for at least 30 minutes in the refrigerator.
  3. Preheat a grill or grill pan over medium-high heat and brush it lightly with sesame oil.
  4. Remove the duck from the marinade, shaking off excess, and season with salt and pepper.
  5. Place the duck breast skin-side down on the grill. Cook for 6-8 minutes until the skin is crispy and golden.
  6. Flip the duck breast and cook for another 5-7 minutes for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes.
  7. While the duck is resting, grill the sliced bell pepper and zucchini until tender, about 4-5 minutes.
  8. Slice the duck breast thinly against the grain and serve with the grilled vegetables and chopped green onions on top.
