- Duck breast - 300 grams
- Soy sauce - 30 ml
- Mirin - 30 ml
- Sake - 15 ml
- Brown sugar - 15 grams
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 tablespoon
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Green onions - 2, chopped
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, mix soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to create the marinade.
- Score the skin of the duck breast in a crosshatch pattern, then place it in the marinade. Let it marinate for at least 30 minutes in the refrigerator.
- Preheat a grill or grill pan over medium-high heat and brush it lightly with sesame oil.
- Remove the duck from the marinade, shaking off excess, and season with salt and pepper.
- Place the duck breast skin-side down on the grill. Cook for 6-8 minutes until the skin is crispy and golden.
- Flip the duck breast and cook for another 5-7 minutes for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes.
- While the duck is resting, grill the sliced bell pepper and zucchini until tender, about 4-5 minutes.
- Slice the duck breast thinly against the grain and serve with the grilled vegetables and chopped green onions on top.
