Steps
- 1. Start by scoring the skin of the duck breast in a crisscross pattern without cutting into the meat. Season both sides with salt and pepper.
- 2. Heat a skillet over medium heat and place the duck breast skin-side down. Cook for about 6-8 minutes until the skin is crispy and golden brown. Flip and cook for another 4-5 minutes until the meat is medium rare.
- 3. Remove the duck from the skillet and let it rest for 5 minutes before slicing thinly.
- 4. In a pot, bring the dashi stock to a simmer. Add the soy sauce, mirin, garlic, ginger, and mushrooms, and simmer for 5 minutes.
- 5. Meanwhile, cook the soba noodles according to package instructions, then drain and rinse under cold water.
- 6. Divide the cooked soba noodles into bowls and ladle the hot broth with mushrooms over the noodles.
- 7. Top with sliced duck breast, chopped spring onions, and a drizzle of sesame oil. Garnish with nori seaweed before serving.
