Ingredients

  • Duck breast - 200 grams
  • Soba noodles - 150 grams
  • Dashi stock - 500 ml
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Green onions - 2 stalks, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Spinach - 100 grams
  • Sesame oil - 10 ml
  • Salt - to taste

Steps

  1. 1. Begin by preparing the duck breast; score the skin diagonally and season with salt.
  2. 2. In a skillet, place the duck breast skin-side down over medium heat to render the fat, cooking for about 6-8 minutes until the skin is crispy.
  3. 3. Flip the duck breast and cook for an additional 4-5 minutes until cooked to medium-rare. Remove from heat and let it rest.
  4. 4. In a pot, bring dashi stock to a simmer and add soy sauce and mirin.
  5. 5. Add the sliced shiitake mushrooms and cook for about 5 minutes until tender.
  6. 6. Meanwhile, cook the soba noodles according to package instructions, then drain and rinse under cold water.
  7. 7. In the last 2 minutes of broth cooking, add spinach to wilt.
  8. 8. Divide the soba noodles into serving bowls, ladle the hot broth and vegetables over the noodles.
  9. 9. Slice the duck breast thinly and place it on top of the soba. Drizzle with sesame oil and garnish with chopped green onions.
