- Duck breast - 200 grams
- Soba noodles - 150 grams
- Dashi stock - 500 ml
- Soy sauce - 30 ml
- Mirin - 15 ml
- Green onions - 2 stalks, chopped
- Shiitake mushrooms - 100 grams, sliced
- Spinach - 100 grams
- Sesame oil - 10 ml
- Salt - to taste
Steps
- 1. Begin by preparing the duck breast; score the skin diagonally and season with salt.
- 2. In a skillet, place the duck breast skin-side down over medium heat to render the fat, cooking for about 6-8 minutes until the skin is crispy.
- 3. Flip the duck breast and cook for an additional 4-5 minutes until cooked to medium-rare. Remove from heat and let it rest.
- 4. In a pot, bring dashi stock to a simmer and add soy sauce and mirin.
- 5. Add the sliced shiitake mushrooms and cook for about 5 minutes until tender.
- 6. Meanwhile, cook the soba noodles according to package instructions, then drain and rinse under cold water.
- 7. In the last 2 minutes of broth cooking, add spinach to wilt.
- 8. Divide the soba noodles into serving bowls, ladle the hot broth and vegetables over the noodles.
- 9. Slice the duck breast thinly and place it on top of the soba. Drizzle with sesame oil and garnish with chopped green onions.
