- Udon noodles - 200 grams
- Duck breast - 200 grams
- Dashi broth - 500 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Green onions - 2 stalks, chopped
- Shiitake mushrooms - 100 grams, sliced
- Carrot - 1 medium, julienned
- Spinach - 100 grams
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Start by preparing the udon noodles according to package instructions. Drain and set aside.
- In a skillet, heat sesame oil over medium heat. Season the duck breast with salt and black pepper, then place it skin-side down in the skillet.
- Cook the duck for about 5-7 minutes or until the skin is crispy. Flip and cook for another 5 minutes until the meat is medium rare. Remove from skillet, let it rest, then slice thinly.
- In a pot, combine the dashi broth, soy sauce, and mirin. Bring to a gentle simmer.
- Add the shiitake mushrooms, carrot, and spinach to the broth. Cook for about 3-4 minutes until the vegetables are tender.
- Divide the cooked udon noodles between two bowls. Pour the hot broth and vegetables over the noodles.
- Top with sliced duck breast and garnish with chopped green onions. Serve immediately.
