Ingredients

  • Udon noodles - 200 grams
  • Duck breast - 200 grams
  • Dashi broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Spinach - 100 grams
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by preparing the udon noodles according to package instructions. Drain and set aside.
  2. In a skillet, heat sesame oil over medium heat. Season the duck breast with salt and black pepper, then place it skin-side down in the skillet.
  3. Cook the duck for about 5-7 minutes or until the skin is crispy. Flip and cook for another 5 minutes until the meat is medium rare. Remove from skillet, let it rest, then slice thinly.
  4. In a pot, combine the dashi broth, soy sauce, and mirin. Bring to a gentle simmer.
  5. Add the shiitake mushrooms, carrot, and spinach to the broth. Cook for about 3-4 minutes until the vegetables are tender.
  6. Divide the cooked udon noodles between two bowls. Pour the hot broth and vegetables over the noodles.
  7. Top with sliced duck breast and garnish with chopped green onions. Serve immediately.
