Steps
- Start by scoring the skin of the duck breast in a crosshatch pattern without cutting into the meat. Season both sides with salt and black pepper.
- In a skillet over medium heat, place the duck breast skin-side down and cook for about 6-8 minutes until the skin is crispy and golden. Flip the duck breast and cook for an additional 4-5 minutes until medium rare.
- Remove the duck from the skillet and let it rest for 5 minutes before slicing it thinly.
- In the same skillet, add the scallions and sesame oil, sautéing for 2-3 minutes until softened.
- Pour in the dashi stock, soy sauce, mirin, and sake, bringing the mixture to a gentle simmer and cooking for about 5 minutes.
- Add the cooked rice to the skillet, stirring gently to combine with the broth and scallions. Allow it to heat through for another 3-4 minutes.
- Serve the rice mixture in bowls, topping it with the sliced duck breast and additional scallions if desired.
