Ingredients

  • Duck breast - 200 grams
  • Soba noodles - 150 grams
  • Dashi stock - 500 ml
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Green onions - 2 stalks, thinly sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Salt - to taste
  • Pepper - to taste
  • Sesame oil - 1 tablespoon

Steps

  1. Start by bringing a pot of water to a boil and cook the soba noodles according to package instructions, usually about 5-7 minutes. Drain and set aside.
  2. In a pan, heat sesame oil over medium heat. Season the duck breast with salt and pepper, then sear it skin-side down for about 6-8 minutes until crispy, then flip and cook for another 4-5 minutes until cooked through.
  3. Remove the duck from the pan and let it rest for a few minutes before slicing it thinly.
  4. In the same pan, add the sliced shiitake mushrooms and sauté for 2-3 minutes until softened. Pour in the dashi stock, soy sauce, and mirin, bringing it to a gentle simmer.
  5. Add the cooked soba noodles to the broth and stir gently to combine, allowing them to soak up the flavors for about 2 minutes.
  6. Divide the noodle and broth mixture into two bowls, top with sliced duck breast, and garnish with fresh green onions.
