Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Water - 300 ml
  • Daikon radish - 100 grams, sliced
  • Green onions - 2, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Cut the pork belly into 2-inch cubes and set aside.
  2. In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, sautéing until fragrant.
  3. Add the pork belly cubes to the pot and sear them on all sides until browned.
  4. Pour in the soy sauce, mirin, sake, and water, stirring to combine.
  5. Add the sliced daikon radish and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, until the pork is tender.
  7. After 60 minutes, remove the lid and increase the heat to medium-high, allowing the sauce to reduce for another 15-20 minutes until thickened.
  8. Serve the stew hot, garnished with chopped green onions and a sprinkle of black pepper.
