Ingredients

  • Pork belly - 150 grams
  • Soy sauce - 30 ml
  • Mirin - 30 ml
  • Sugar - 15 grams
  • Water - 200 ml
  • Gelatin powder - 5 grams
  • Greek yogurt - 100 grams
  • Matcha powder - 5 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. In a pot, combine the pork belly, soy sauce, mirin, sugar, and water. Bring to a boil, then reduce to a simmer, cover, and cook for about 60 minutes until the pork is tender.
  2. Remove the pork from the pot and let it cool. Reserve the cooking liquid.
  3. Once the pork is cool, chop it into small pieces and place in a blender.
  4. In a separate bowl, bloom the gelatin in 2 tablespoons of cold water for 5 minutes, then dissolve it in 50 ml of the reserved cooking liquid over low heat.
  5. Add the dissolved gelatin, Greek yogurt, matcha powder, and vanilla extract to the blender with the pork. Blend until smooth.
  6. Pour the mixture into two serving cups and refrigerate for at least 30 minutes until set.
  7. Serve chilled, optionally garnished with a sprinkle of matcha powder or a slice of pork on top.
