Ingredients
- Pork belly - 150 grams
- Soy sauce - 30 ml
- Mirin - 30 ml
- Sugar - 15 grams
- Water - 200 ml
- Gelatin powder - 5 grams
- Greek yogurt - 100 grams
- Matcha powder - 5 grams
- Vanilla extract - 1 teaspoon
Steps
- In a pot, combine the pork belly, soy sauce, mirin, sugar, and water. Bring to a boil, then reduce to a simmer, cover, and cook for about 60 minutes until the pork is tender.
- Remove the pork from the pot and let it cool. Reserve the cooking liquid.
- Once the pork is cool, chop it into small pieces and place in a blender.
- In a separate bowl, bloom the gelatin in 2 tablespoons of cold water for 5 minutes, then dissolve it in 50 ml of the reserved cooking liquid over low heat.
- Add the dissolved gelatin, Greek yogurt, matcha powder, and vanilla extract to the blender with the pork. Blend until smooth.
- Pour the mixture into two serving cups and refrigerate for at least 30 minutes until set.
- Serve chilled, optionally garnished with a sprinkle of matcha powder or a slice of pork on top.
