Ingredients

  • Pork belly (halal) - 400 grams
  • Soy sauce (halal) - 60 ml
  • Mirin - 60 ml
  • Sake (halal) - 60 ml
  • Sugar - 2 tablespoons
  • Ginger (sliced) - 1 tablespoon
  • Garlic (sliced) - 2 cloves
  • Green onions (for garnish) - 2 stalks
  • Water - 500 ml

Steps

  1. Cut the pork belly into 3 cm cubes and set aside.
  2. In a large pot, combine the soy sauce, mirin, sake, sugar, sliced ginger, and sliced garlic.
  3. Add the pork belly cubes to the pot and pour in the water until the meat is submerged.
  4. Bring the mixture to a boil over medium-high heat, then reduce to low heat and cover.
  5. Simmer the pork belly for about 2 hours, turning occasionally until the meat is tender and the sauce has thickened.
  6. Once cooked, remove the pork belly from the pot and let it rest for a few minutes.
  7. Slice the pork belly into smaller pieces and serve topped with chopped green onions and a drizzle of the reduced sauce.
