- Pork belly (halal) - 400 grams
- Soy sauce (halal) - 60 ml
- Mirin - 60 ml
- Sake (halal) - 60 ml
- Sugar - 2 tablespoons
- Ginger (sliced) - 1 tablespoon
- Garlic (sliced) - 2 cloves
- Green onions (for garnish) - 2 stalks
- Water - 500 ml
Steps
- Cut the pork belly into 3 cm cubes and set aside.
- In a large pot, combine the soy sauce, mirin, sake, sugar, sliced ginger, and sliced garlic.
- Add the pork belly cubes to the pot and pour in the water until the meat is submerged.
- Bring the mixture to a boil over medium-high heat, then reduce to low heat and cover.
- Simmer the pork belly for about 2 hours, turning occasionally until the meat is tender and the sauce has thickened.
- Once cooked, remove the pork belly from the pot and let it rest for a few minutes.
- Slice the pork belly into smaller pieces and serve topped with chopped green onions and a drizzle of the reduced sauce.
