Ingredients
- Beef short ribs - 300 grams
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Sake - 2 tablespoons
- Sugar - 1 tablespoon
- Ginger - 1 tablespoon (grated)
- Garlic - 1 clove (minced)
- Water - 200 ml
- All-purpose flour - 200 grams
- Instant yeast - 1 teaspoon
- Sugar - 1 teaspoon (for dough)
- Salt - 1/2 teaspoon
- Warm water - 120 ml
- Vegetable oil - 1 tablespoon
Steps
- In a pot, combine beef short ribs, soy sauce, mirin, sake, sugar, ginger, garlic, and water. Bring to a boil, then reduce heat and simmer for about 1 hour until the beef is tender.
- Once cooked, remove the beef and let it cool slightly. Reserve the cooking liquid.
- Shred the beef into small pieces and mix it with a few tablespoons of the reserved cooking liquid. Set aside.
- In a bowl, combine flour, instant yeast, sugar, and salt. Gradually add warm water and knead until a smooth dough forms.
- Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, until doubled in size.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a round disc.
- Place a spoonful of the beef mixture in the center of each disc and fold the edges over to seal the filling inside.
- Place the sealed buns on parchment paper in a steamer basket and let them rise for another 15 minutes.
- Steam the buns over boiling water for about 15 minutes until fluffy and cooked through.
