Ingredients

  • Beef short ribs - 300 grams
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sake - 2 tablespoons
  • Sugar - 1 tablespoon
  • Ginger - 1 tablespoon (grated)
  • Garlic - 1 clove (minced)
  • Water - 200 ml
  • All-purpose flour - 200 grams
  • Instant yeast - 1 teaspoon
  • Sugar - 1 teaspoon (for dough)
  • Salt - 1/2 teaspoon
  • Warm water - 120 ml
  • Vegetable oil - 1 tablespoon

Steps

  1. In a pot, combine beef short ribs, soy sauce, mirin, sake, sugar, ginger, garlic, and water. Bring to a boil, then reduce heat and simmer for about 1 hour until the beef is tender.
  2. Once cooked, remove the beef and let it cool slightly. Reserve the cooking liquid.
  3. Shred the beef into small pieces and mix it with a few tablespoons of the reserved cooking liquid. Set aside.
  4. In a bowl, combine flour, instant yeast, sugar, and salt. Gradually add warm water and knead until a smooth dough forms.
  5. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, until doubled in size.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a round disc.
  7. Place a spoonful of the beef mixture in the center of each disc and fold the edges over to seal the filling inside.
  8. Place the sealed buns on parchment paper in a steamer basket and let them rise for another 15 minutes.
  9. Steam the buns over boiling water for about 15 minutes until fluffy and cooked through.
  10. Serve warm and enjoy your Kakuni Manju!
