- Mirin - 30 ml
- Soy sauce (gluten-free) - 30 ml
- Brown sugar - 1 tablespoon (15 grams)
- Water - 200 ml
- Green onions - 2 for garnish
- Sesame seeds - 1 teaspoon for garnish
Steps
- Cut the pork belly into 2 cm cubes and set aside.
- Peel the potatoes and cut them into quarters.
- In a pot, add the pork belly and fry over medium heat until browned on all sides.
- Add the sake, mirin, soy sauce, brown sugar, and water to the pot, stirring well to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot, simmering for 30 minutes.
- Add the potatoes to the pot, ensuring they are submerged in the sauce.
- Cover and simmer for another 20 minutes, or until the potatoes are tender and the pork is melt-in-your-mouth.
- Remove from heat and let it rest for 5 minutes before serving.
- Garnish with chopped green onions and sesame seeds before serving.
