Ingredients

  • Pork belly - 200 grams
  • Potatoes (Yukon Gold or similar) - 2 medium (about 300 grams total)
  • Sake - 50 ml
  • Mirin - 30 ml
  • Soy sauce (gluten-free) - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Water - 200 ml
  • Green onions - 2 for garnish
  • Sesame seeds - 1 teaspoon for garnish

Steps

  1. Cut the pork belly into 2 cm cubes and set aside.
  2. Peel the potatoes and cut them into quarters.
  3. In a pot, add the pork belly and fry over medium heat until browned on all sides.
  4. Add the sake, mirin, soy sauce, brown sugar, and water to the pot, stirring well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot, simmering for 30 minutes.
  6. Add the potatoes to the pot, ensuring they are submerged in the sauce.
  7. Cover and simmer for another 20 minutes, or until the potatoes are tender and the pork is melt-in-your-mouth.
  8. Remove from heat and let it rest for 5 minutes before serving.
  9. Garnish with chopped green onions and sesame seeds before serving.
