Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sake - 2 tablespoons
  • Sugar - 1 tablespoon
  • Ginger - 1 inch, sliced
  • Green onions - 2, chopped
  • Cooked Japanese short-grain rice - 1 cup
  • Water - 1 cup
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Cut the pork belly into 2 cm cubes and set aside.
  2. In a pot, add the pork belly and cover with water. Bring to a boil and then simmer for 5 minutes to remove impurities. Drain and rinse the pork.
  3. In the same pot, add the pork belly, soy sauce, mirin, sake, sugar, ginger, and 1 cup of water. Bring to a boil, then reduce heat to low and simmer covered for about 1 hour, stirring occasionally.
  4. After 1 hour, remove the lid and continue simmering for another 30 minutes to allow the sauce to thicken.
  5. While the pork is cooking, prepare the rice according to package instructions.
  6. Once the pork is tender and the sauce is thickened, remove from heat and let it rest for a few minutes.
  7. To serve, place a portion of rice in a bowl, top with the braised pork belly, and drizzle some sauce over it. Garnish with chopped green onions and sesame seeds.
