Ingredients
- Pork belly - 300 grams
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Sake - 2 tablespoons
- Sugar - 1 tablespoon
- Ginger - 1 inch, sliced
- Green onions - 2, chopped
- Cooked Japanese short-grain rice - 1 cup
- Water - 1 cup
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Cut the pork belly into 2 cm cubes and set aside.
- In a pot, add the pork belly and cover with water. Bring to a boil and then simmer for 5 minutes to remove impurities. Drain and rinse the pork.
- In the same pot, add the pork belly, soy sauce, mirin, sake, sugar, ginger, and 1 cup of water. Bring to a boil, then reduce heat to low and simmer covered for about 1 hour, stirring occasionally.
- After 1 hour, remove the lid and continue simmering for another 30 minutes to allow the sauce to thicken.
- While the pork is cooking, prepare the rice according to package instructions.
- Once the pork is tender and the sauce is thickened, remove from heat and let it rest for a few minutes.
- To serve, place a portion of rice in a bowl, top with the braised pork belly, and drizzle some sauce over it. Garnish with chopped green onions and sesame seeds.
