Ingredients
- Pork belly - 300 grams
- Soy sauce - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Sugar - 1 tablespoon
- Ginger - 1 thumb-sized piece, sliced
- Garlic - 2 cloves, minced
- Green onions - 2, chopped
- Cooked rice - 2 cups
- Eggs - 2
- Water - 500 ml
- Sesame oil - 1 teaspoon
- Salt - to taste
Steps
- Cut the pork belly into 2-inch cubes and set aside.
- In a large pot, combine soy sauce, mirin, sake, sugar, ginger, garlic, and water. Bring to a simmer over medium heat.
- Add the pork belly cubes to the pot, ensuring they are submerged in the liquid. Cover and simmer on low heat for 60-70 minutes until tender.
- While the pork is cooking, prepare the rice according to package instructions.
- Once the pork is tender, remove it from the pot and let it rest for a few minutes. Strain the sauce to remove solids and return it to the pot.
- Increase the heat and reduce the sauce until slightly thickened, about 10 minutes.
- In a separate pot, bring water to a gentle boil and poach the eggs for about 3-4 minutes or until the whites are set but the yolks are still runny.
- To serve, place a generous scoop of rice in each bowl, top with the braised pork, drizzle with the reduced sauce, and place a poached egg on top.
- Garnish with chopped green onions and drizzle with sesame oil before serving.
