- Pork belly - 300 grams
- Soy sauce - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Brown sugar - 1 tablespoon
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Water - 300 ml
- Cooked white rice - 300 grams
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
Steps
- Cut the pork belly into 2-inch cubes and set aside.
- In a large pot, combine the soy sauce, mirin, sake, brown sugar, ginger, garlic, and water. Bring to a simmer.
- Add the pork belly cubes to the pot, ensuring they are submerged in the liquid.
- Cover the pot and let it simmer on low heat for about 1.5 hours, or until the pork is tender.
- Once cooked, remove the pork belly and let it cool slightly. Strain the liquid and return it to the pot.
- Increase the heat to medium-high and let the sauce reduce for about 10 minutes until slightly thickened.
- Return the pork belly to the pot, coating it with the sauce. Cook for an additional 5 minutes.
- Serve the cooked pork over a bed of steamed rice, drizzle with extra sauce, and garnish with chopped green onions and sesame seeds.
