Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Brown sugar - 1 tablespoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Water - 300 ml
  • Cooked white rice - 300 grams
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Cut the pork belly into 2-inch cubes and set aside.
  2. In a large pot, combine the soy sauce, mirin, sake, brown sugar, ginger, garlic, and water. Bring to a simmer.
  3. Add the pork belly cubes to the pot, ensuring they are submerged in the liquid.
  4. Cover the pot and let it simmer on low heat for about 1.5 hours, or until the pork is tender.
  5. Once cooked, remove the pork belly and let it cool slightly. Strain the liquid and return it to the pot.
  6. Increase the heat to medium-high and let the sauce reduce for about 10 minutes until slightly thickened.
  7. Return the pork belly to the pot, coating it with the sauce. Cook for an additional 5 minutes.
  8. Serve the cooked pork over a bed of steamed rice, drizzle with extra sauce, and garnish with chopped green onions and sesame seeds.
