Ingredients

  • Pork belly - 300 grams, kosher
  • Water - 500 ml
  • Soy sauce (kosher) - 60 ml
  • Mirin (kosher) - 30 ml
  • Brown sugar - 2 tablespoons (30 grams)
  • Ginger - 1 tablespoon, sliced
  • Garlic - 2 cloves, crushed
  • Green onions - 2 stalks, chopped
  • Daikon radish - 100 grams, sliced (optional)

Steps

  1. In a large pot, bring 500 ml of water to a boil and add the pork belly. Boil for 5 minutes, then remove the pork and drain.
  2. In the same pot, combine 60 ml of soy sauce, 30 ml of mirin, 2 tablespoons of brown sugar, sliced ginger, and crushed garlic. Stir to combine.
  3. Return the pork belly to the pot, ensuring it is covered by the sauce mixture. Bring to a simmer.
  4. Cover the pot and reduce the heat to low. Let it braise for about 2 hours, turning the pork occasionally for even cooking.
  5. If using, add the sliced daikon radish in the last 30 minutes of cooking.
  6. Once the pork is tender and the sauce has thickened, remove it from heat.
  7. Serve hot, garnished with chopped green onions.
