Ingredients
- Pork belly - 300 grams, kosher
- Water - 500 ml
- Soy sauce (kosher) - 60 ml
- Mirin (kosher) - 30 ml
- Brown sugar - 2 tablespoons (30 grams)
- Ginger - 1 tablespoon, sliced
- Garlic - 2 cloves, crushed
- Green onions - 2 stalks, chopped
- Daikon radish - 100 grams, sliced (optional)
Steps
- In a large pot, bring 500 ml of water to a boil and add the pork belly. Boil for 5 minutes, then remove the pork and drain.
- In the same pot, combine 60 ml of soy sauce, 30 ml of mirin, 2 tablespoons of brown sugar, sliced ginger, and crushed garlic. Stir to combine.
- Return the pork belly to the pot, ensuring it is covered by the sauce mixture. Bring to a simmer.
- Cover the pot and reduce the heat to low. Let it braise for about 2 hours, turning the pork occasionally for even cooking.
- If using, add the sliced daikon radish in the last 30 minutes of cooking.
- Once the pork is tender and the sauce has thickened, remove it from heat.
- Serve hot, garnished with chopped green onions.
