Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Water - 250 ml
  • Ginger - 10 grams, sliced
  • Green onions - 2 stalks, chopped
  • Carrots - 100 grams, sliced
  • Daikon radish - 100 grams, sliced
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cut the pork belly into 2-inch cubes and season with salt and pepper.
  2. In a pot, heat sesame oil over medium heat and sear the pork belly on all sides until browned.
  3. Add the ginger slices, green onions, soy sauce, mirin, sake, and water to the pot.
  4. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  5. Simmer for about 90 minutes, or until the pork is tender and the flavors are well combined.
  6. Add the sliced carrots and daikon radish to the pot during the last 30 minutes of cooking.
  7. Once cooked, remove from heat and let it rest for a few minutes before serving.
  8. Serve warm, garnished with additional chopped green onions if desired.
