Ingredients

  • Ice - 400 grams

  • Sugar - 100 grams
  • Water - 240 milliliters
  • Condensed milk - 2 tablespoons (30 milliliters)
  • Sweet red beans (azuki) - 100 grams (optional, for topping)
  • Fresh mint leaves - for garnish (optional)

Steps

  1. In a small saucepan, combine sugar and water over medium heat. Stir until the sugar is fully dissolved to create a simple syrup, then remove from heat and let it cool.
  2. In a bowl, mix the matcha powder with 2 tablespoons of the cooled simple syrup until smooth to create the matcha syrup.
  3. Using a shaved ice machine or a grater, shave the ice into a large bowl or individual serving bowls.
  4. Drizzle the matcha syrup evenly over the shaved ice, followed by a drizzle of condensed milk.
  5. If using, add a spoonful of sweet red beans on top of the ice.
