Ingredients

  • Ice - 400 grams
  • Fresh strawberries - 150 grams
  • Fresh mango - 150 grams
  • Agave syrup - 60 ml
  • Coconut milk - 100 ml
  • Sweetened condensed coconut milk - 30 ml
  • Mint leaves - for garnish

Steps

  1. Begin by preparing the fruit syrups. For the strawberry syrup, blend the fresh strawberries with 30 ml of agave syrup until smooth. Strain through a fine mesh sieve to remove seeds and set aside.
  2. For the mango syrup, blend the fresh mango with the remaining 30 ml of agave syrup until smooth. Strain through a fine mesh sieve and set aside.
  3. Shave the ice using a traditional ice shaver or food processor until it reaches a fluffy, snow-like texture.
  4. In serving bowls, pile the shaved ice high. Drizzle the strawberry syrup over one bowl and the mango syrup over the other.
  5. Pour 50 ml of coconut milk over each bowl and drizzle with 15 ml of sweetened condensed coconut milk for added creaminess.
  6. Garnish with fresh mint leaves on top and serve immediately.
