- Ice - 400 grams
- Fresh strawberries - 150 grams
- Fresh mango - 150 grams
- Agave syrup - 60 ml
- Coconut milk - 100 ml
- Sweetened condensed coconut milk - 30 ml
- Mint leaves - for garnish
Steps
- Begin by preparing the fruit syrups. For the strawberry syrup, blend the fresh strawberries with 30 ml of agave syrup until smooth. Strain through a fine mesh sieve to remove seeds and set aside.
- For the mango syrup, blend the fresh mango with the remaining 30 ml of agave syrup until smooth. Strain through a fine mesh sieve and set aside.
- Shave the ice using a traditional ice shaver or food processor until it reaches a fluffy, snow-like texture.
- In serving bowls, pile the shaved ice high. Drizzle the strawberry syrup over one bowl and the mango syrup over the other.
- Pour 50 ml of coconut milk over each bowl and drizzle with 15 ml of sweetened condensed coconut milk for added creaminess.
- Garnish with fresh mint leaves on top and serve immediately.
