Ingredients
- Short-grain rice - 150 grams
- Water - 200 ml
- Ice - 100 grams (shaved)
- Soy sauce (Halal) - 1 tablespoon
- Mirin (Halal) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Carrot - 50 grams (julienned)
- Cucumber - 50 grams (julienned)
- Green onions - 2 stalks (finely chopped)
- Toasted sesame seeds - 1 tablespoon
- Pickled ginger - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.
- In a rice cooker or pot, combine the rinsed rice and 200 ml of water. Cook according to the rice cooker instructions, or bring to a boil, then reduce heat and simmer covered for 15 minutes until all water is absorbed.
- Once the rice is cooked, let it rest for 10 minutes off the heat.
- In a small bowl, mix soy sauce, mirin, and sesame oil to create a dressing.
- In serving bowls, fluff the cooked rice and drizzle the dressing over it.
- Top each bowl with shaved ice, then add julienned carrot, cucumber, and chopped green onions.
- Sprinkle toasted sesame seeds on top and add pickled ginger to taste.
- Serve immediately and enjoy the combination of warm rice and cool shaved ice.
