Ingredients

  • Short-grain rice - 150 grams
  • Water - 200 ml
  • Ice - 100 grams (shaved)
  • Soy sauce (Halal) - 1 tablespoon
  • Mirin (Halal) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Carrot - 50 grams (julienned)
  • Cucumber - 50 grams (julienned)
  • Green onions - 2 stalks (finely chopped)
  • Toasted sesame seeds - 1 tablespoon
  • Pickled ginger - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.
  2. In a rice cooker or pot, combine the rinsed rice and 200 ml of water. Cook according to the rice cooker instructions, or bring to a boil, then reduce heat and simmer covered for 15 minutes until all water is absorbed.
  3. Once the rice is cooked, let it rest for 10 minutes off the heat.
  4. In a small bowl, mix soy sauce, mirin, and sesame oil to create a dressing.
  5. In serving bowls, fluff the cooked rice and drizzle the dressing over it.
  6. Top each bowl with shaved ice, then add julienned carrot, cucumber, and chopped green onions.
  7. Sprinkle toasted sesame seeds on top and add pickled ginger to taste.
  8. Serve immediately and enjoy the combination of warm rice and cool shaved ice.
