  • Salt - to taste

Steps

  1. In a pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
  2. Pour in the dashi stock, soy sauce, and mirin. Bring the mixture to a gentle simmer.
  3. Add the fresh oysters to the pot and let them cook for about 5 minutes until they are opaque.
  4. In a separate pot, steam the carrots and broccoli for about 5-7 minutes until tender but still crisp.
  5. Once the oysters are cooked, season the broth with salt and black pepper to taste.
  6. Serve the oysters in bowls with the broth, and garnish with chopped spring onions.
  7. Plate the steamed vegetables alongside the oyster broth for a complete dish.
