- Japanese short-grain rice - 1 cup (200g)
- Water - 1 1/4 cups (300ml)
- Chestnuts (roasted and peeled) - 100g
- Carrot (medium, diced) - 1
- Shiitake mushrooms (sliced) - 100g
- Soy sauce - 2 tablespoons (30ml)
- Mirin - 1 tablespoon (15ml)
- Vegetable broth - 1 cup (240ml)
- Green onions (sliced) - 2 tablespoons
- Sesame oil - 1 teaspoon (5ml)
- Salt - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat sesame oil over medium heat and sauté the diced carrot and sliced shiitake mushrooms for about 5 minutes until they begin to soften.
- Add the roasted chestnuts to the pot and stir for another 2 minutes.
- Drain the soaked rice and add it to the pot, mixing it gently with the vegetables.
- Pour in the vegetable broth, water, soy sauce, and mirin. Stir to combine, then bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 10 minutes to steam.
- Fluff the rice with a fork, season with salt to taste, and garnish with sliced green onions before serving.
