Ingredients

  • Japanese short-grain rice - 1 cup (200g)
  • Water - 1 1/4 cups (300ml)
  • Chestnuts (roasted and peeled) - 100g
  • Carrot (medium, diced) - 1
  • Shiitake mushrooms (sliced) - 100g
  • Soy sauce - 2 tablespoons (30ml)
  • Mirin - 1 tablespoon (15ml)
  • Vegetable broth - 1 cup (240ml)
  • Green onions (sliced) - 2 tablespoons
  • Sesame oil - 1 teaspoon (5ml)
  • Salt - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat sesame oil over medium heat and sauté the diced carrot and sliced shiitake mushrooms for about 5 minutes until they begin to soften.
  3. Add the roasted chestnuts to the pot and stir for another 2 minutes.
  4. Drain the soaked rice and add it to the pot, mixing it gently with the vegetables.
  5. Pour in the vegetable broth, water, soy sauce, and mirin. Stir to combine, then bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 10 minutes to steam.
  8. Fluff the rice with a fork, season with salt to taste, and garnish with sliced green onions before serving.
