Ingredients

  • Buckwheat soba noodles - 150g
  • Chicken breast, diced - 200g
  • Spinach - 100g
  • Carrot, julienned - 50g
  • Green onions, chopped - 2 stalks
  • Soy sauce - 30ml
  • Mirin - 15ml
  • Sesame oil - 10ml
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 tsp
  • Water - 1.5 liters
  • Sesame seeds, toasted - 1 tbsp

Steps

  1. Boil 1.5 liters of water in a pot. Add the buckwheat soba noodles and cook according to package instructions, usually about 4-5 minutes. Drain and set aside.
  2. In a separate pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the diced chicken breast to the pan and cook until no longer pink, about 5-7 minutes.
  4. Stir in the soy sauce and mirin, cooking for an additional 2 minutes.
  5. Add the julienned carrot and spinach to the pan, cooking until the spinach is wilted, about 2-3 minutes.
  6. Combine the cooked soba noodles with the chicken and vegetable mixture, tossing gently to combine.
  7. Serve the Kake Soba warm, garnished with chopped green onions and toasted sesame seeds.
