Ingredients
- Buckwheat soba noodles - 150g
- Chicken breast, diced - 200g
- Spinach - 100g
- Carrot, julienned - 50g
- Green onions, chopped - 2 stalks
- Soy sauce - 30ml
- Mirin - 15ml
- Sesame oil - 10ml
- Garlic, minced - 2 cloves
- Ginger, grated - 1 tsp
- Water - 1.5 liters
- Sesame seeds, toasted - 1 tbsp
Steps
- Boil 1.5 liters of water in a pot. Add the buckwheat soba noodles and cook according to package instructions, usually about 4-5 minutes. Drain and set aside.
- In a separate pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the diced chicken breast to the pan and cook until no longer pink, about 5-7 minutes.
- Stir in the soy sauce and mirin, cooking for an additional 2 minutes.
- Add the julienned carrot and spinach to the pan, cooking until the spinach is wilted, about 2-3 minutes.
- Combine the cooked soba noodles with the chicken and vegetable mixture, tossing gently to combine.
- Serve the Kake Soba warm, garnished with chopped green onions and toasted sesame seeds.
