- Soy sauce (low sodium) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon

Steps
- Begin by peeling and slicing the kabocha squash into thin strips or small cubes.
- Rinse the shirataki noodles under cold water and drain them well.
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.
- Add minced garlic and sliced green onions to the skillet, sauté for about 1 minute until fragrant.
- Add the kabocha squash to the skillet and stir-fry for about 5-7 minutes, or until it begins to soften.
- Add the sliced bell pepper and julienned carrot, and continue to stir-fry for another 3-4 minutes until all vegetables are tender-crisp.
- Add the rinsed shirataki noodles to the skillet along with the soy sauce and sesame oil, and toss everything together to combine well.
