Ingredients

  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, sliced
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Cucumber - 1 small, julienned
  • Sesame seeds - 1 tablespoon
  • Water - 1 cup

Steps

  1. Spiralize the kabocha squash into noodles using a spiralizer or a vegetable peeler.
  2. In a pot, bring 1 cup of water to a boil and add the shirataki noodles. Cook for 2-3 minutes, drain, and set aside.
  3. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the kabocha noodles to the skillet and stir-fry for about 5-7 minutes until they are tender.
  5. In a small bowl, mix the miso paste, soy sauce, and a splash of water to create a sauce. Pour this over the kabocha noodles and stir well to combine.
  6. Add the julienned carrot, sliced red bell pepper, and cucumber to the skillet, tossing everything together for another 2-3 minutes until the vegetables are slightly softened.
  7. Remove from heat and serve the noodle bowl topped with sliced green onions and a sprinkle of sesame seeds.
