Ingredients
- Kabocha squash - 300 grams
- Potato - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Panko breadcrumbs - 100 grams
- All-purpose flour - 50 grams
- Egg - 1 large, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Japanese mayo - 2 tablespoons
- Soy sauce - 1 teaspoon
- Sesame oil - 1 teaspoon
Steps
- Cut the kabocha squash into quarters and remove the seeds. Steam or boil until tender, about 15-20 minutes.
- Peel and chop the potato, then boil it until soft, about 10-15 minutes. Drain and mash both the kabocha and potato in a bowl.
- In a skillet, heat a small amount of vegetable oil over medium heat. Sauté the chopped onion and minced garlic until translucent, about 5 minutes. Let it cool slightly.
- Add the sautéed onion and garlic to the mashed kabocha and potato mixture. Season with salt and black pepper, and mix well.
- Form the mixture into 2 patties. Dredge each patty in flour, then dip in the beaten egg, and finally coat with panko breadcrumbs.
- In a frying pan, heat vegetable oil over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- To assemble the burger, spread Japanese mayo and a drizzle of soy sauce mixed with sesame oil on the bottom half of each burger bun. Place a lettuce leaf and a kabocha korokke patty on top, followed by a slice of tomato. Top with the other half of the bun.
