- Short-grain rice - 1 cup (200 g)
- Kabocha squash - 200 g
- Water - 1 1/4 cups (300 ml)
- Soy sauce - 1 tablespoon (15 ml)
- Mirin - 1 tablespoon (15 ml)
- Vegetable broth - 1/2 cup (120 ml)
- Sesame oil - 1 teaspoon (5 ml)
- Salt - to taste
- Green onions - 1 stalk, finely chopped
- Black sesame seeds - for garnish
Steps
- Rinse the short-grain rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- While the rice is soaking, peel and seed the kabocha squash, then cut it into small, bite-sized cubes.
- In a medium saucepan, combine the drained rice, water, soy sauce, mirin, and vegetable broth. Stir in the kabocha squash cubes.
- Bring the mixture to a boil over medium heat, then reduce to low heat, cover, and simmer for about 25 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes to steam.
- Fluff the rice with a fork, then drizzle with sesame oil and season with salt to taste. Stir gently to combine.
- Serve the Kabocha Gohan warm, garnished with chopped green onions and black sesame seeds.
