Ingredients

  • Short-grain rice - 1 cup (200 g)
  • Kabocha squash - 200 g
  • Water - 1 1/4 cups (300 ml)
  • Soy sauce - 1 tablespoon (15 ml)
  • Mirin - 1 tablespoon (15 ml)
  • Vegetable broth - 1/2 cup (120 ml)
  • Sesame oil - 1 teaspoon (5 ml)
  • Salt - to taste
  • Green onions - 1 stalk, finely chopped
  • Black sesame seeds - for garnish

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. While the rice is soaking, peel and seed the kabocha squash, then cut it into small, bite-sized cubes.
  3. In a medium saucepan, combine the drained rice, water, soy sauce, mirin, and vegetable broth. Stir in the kabocha squash cubes.
  4. Bring the mixture to a boil over medium heat, then reduce to low heat, cover, and simmer for about 25 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes to steam.
  6. Fluff the rice with a fork, then drizzle with sesame oil and season with salt to taste. Stir gently to combine.
  7. Serve the Kabocha Gohan warm, garnished with chopped green onions and black sesame seeds.
